The dough is distributed to the Rolling (Vanai) department where it is hand rolled. Hand rolling is the essence of the production unit. We do not use machine rolling as it beats the very reason to consume a Khakhra. Machine made Khakhra can cut costs but cannot meet the quality or the consumption delight of the Khakhra.
